Since the iPhone does not support cut, copy and paste already, here are some suggestions on how FreeMind might work on the iPhone.
For cut, copy and paste of text (rather than nodes), first tap to bring up the loupe, find the starting location, then tap with a second finger. At this point something like "|<--" is displayed to indicate the start of a selection. Then find the end of the selection and do the same thing. If the selection is small enough, supporting holding both fingers down to select the end of the text would be helpful. At this point it's just the same as a demo I saw on Engadget (which has been removed, unfortunately). However, the demo on Engadget doesn't distinguish between copy and paste. At this point, we've made a selection but we might want to paste a previous copy into it, or cut, or copy. Once a selection is made the user does a grab gesture for cut and a drop gesture for paste. It's similar to a pinch (for zooming), except with three fingers. Or tap three fingers for copy.
To select multiple nodes, tap with two fingers to select/deselect a node.
To open a node, use a three finger gesture like opening a jar (similar to the Fingerworks Gestures) but with three fingers instead of four. To distinguish between open (or close) and cut, the thumb and fingers will switch positions left to right across the surface, whereas with a cut they will all come together.
